Episode 4: Bake Off: The Professionals

Summary

Six new teams enter the kitchen and for their first challenge they must produce two different types of miniature classics, the lemon meringue pie and the tiramisu - 24 perfect examples of each in three and a half hours. After that judges Benoit Blin and Cherish Finden ask them to take the humble fruit crumble and transform it into a fine-dining showpiece, complete with towering, edible sculptures. Presented by Tom Allen and Liam Charles.

Review

Cherish Finden says the chefs should be able to make miniature versions of lemon meringue pies and tiramisu with their eyes closed. Now that could make for an interesting – if dangerous – challenge in a busy kitchen. Perhaps they could also create a croquembouche showpiece with one hand tied behind their backs?

We have six new teams fretting over runny mixtures, exotic flavour combinations, cracked pastry cases and the need to check the temperature of the blast chiller (oops). However, one person gets a high five from Benoit Blin for an innovative design. 

Then it’s on to a towering showpiece featuring fruit crumbles. It all seems to be going OK until one team walks away from their finished item – presumably to nip off for a rejuvenating cuppa – and their structure crashes down, smashing into pieces. Surprisingly they’re not the ones to get the harshest critique so, although our previews don’t include it, maybe they’re not sent home this week.
