One day, after hearing what the skills test is, a chef is going to whip off his apron and admit he or she hasn’t a clue. The six professionals taking part today don’t do that, but nearly all of them have a disastrous round. By which I mean they serve raw quail and half-cooked beignets, so for maybe the first time ever the judges can’t eat anything. As ever, things perk up in the signature dish round with a sauce Robert (a previous skills test), an unusual minestrone, a take on coronation chicken and the happiest chef you’ve ever seen – he has a massive smile, even if things go wrong.

Summary

In the latest heat, Monica Galetti challenges three of the chefs to employ deft knife skills to spatchcock a quail before cooking it with rocket pesto in just 15 minutes. The remaining contestants prepare Marcus Wareing's beignets with chocolate sauce, before all six get the chance to redeem any earlier mistakes when they cook their own signature dish for Monica, Marcus and Gregg Wallace. The judges then decide which three have done enough to make it through to the quarter-final stage of the competition.
