Visualise the finished product, said Mary Berry the other week in perhaps the first vaguely useful piece of judge’s advice ever to preface the technical bake. But how do you visualise a flaouna, the traditional Cypriot cheese-filled pastry, if you’ve never come across one? This week’s technical brings wildly varying results.

Familiarity isn’t a problem with the showstopper, vol-au-vents, but knowing about them only means knowing how hard they are to get right. Before all that, pastry week kicks off with frangipane tarts. Is one baker’s pina colada flavouring genius or sacrilege?

Summary

The bakers must prove their pastry skills to Paul and Mary, making frangipane tarts for their signature challenge, before a Cypriot flaouna for the technical bake leaves the contestants struggling with ingredients they've never heard of and a pungent smell. The showstopper is to be constructed from vol-au-vents, but getting the puff pastry folded and chilled in time proves to be a huge challenge for some in the tent.
