It’s time for our weekly sugar fix as three more teams of pastry chefs produce acres of beautiful macaroons, petits antoines and gateaux pyramids for those brutal experts to judge.

And boy, are they picky. A fleck of undissolved gelatine, one tiny cake displayed facing the wrong way, an inappropriate choice of chocolate – too much acidity, not enough freshness – they pick up on details you or I definitely wouldn’t notice.

“A good pastry chef can easily be a chef, but a chef cannot easily be a pastry chef,” one contestant tells a grimacing Tom Kerridge. You can see why he says that.

Summary

It's the third heat of the competition and Tom Kerridge welcomes three more teams. Two of the latest captains run their own patisserie businesses, while the third is head pastry chef at a world-renowned Scottish hotel. Precision is the top priority for the contestants when they are asked to make row upon row of identical classic pastries. Then they must innovate as they are challenged to transform lemon meringue pie into the pinnacle of fine dining. To secure a place in the semi-finals the teams must impress the judging panel of Benoit Blin, Claire Clark MBE and Cherish Finden.
