Paul Hollywood, with a countenance of granite and dressed top to toe in black, could pass for an East German border guard, all he needs is an Alsatian straining on a lead. He’s ruthless, the jackboot of his words stamping on the dreams of quivering contestants during biscuits and tray-bake week. “They look… grotesque,” he says of one creation, and when a hopeful baker bewails his terrible week at work and his lack of signature-bake practice Hollywood cuts him off with an unforgiving “preparation is key”.

There are some dramatic reversals of fortune in the tent of delights as the group, now at the halfway stage of the competition, grapples with making tuiles, which are very fiddly. “I will not be defeated by a sodding French biscuit,” says a particularly stressed baker. The showstopper challenge is a riot of biscuit towers, some wobbly and some utterly, completely glorious.

Summary

Judges Mary Berry and Paul Hollywood assess how the remaining contestants cope with preparing biscuits and traybakes. The signature challenge throws up a variety of bakewells, banoffees and brownies, while French classic tuiles are the order of the day in the technical test.
