The Michelin-starred chef improves on dishes he savoured in childhood. He recreates his mother's sausage roast, visiting a Gloucester farm to find the best pork possible for use in the recipe. He also cooks his version of lasagne, incorporating a few extra twists to enhance the flavour, and heads to his old school to prepare a pineapple upside-down cake for the hungry teenagers who now study there.

Cayenne pepper – Tom Kerridge just loves it. In fact he uses it in his food so often, there may well be a run on it at the supermarket, Delia-style. This week he’s shovelling it into several lush dishes from his childhood, including the 80s classic chicken Kiev and his mum’s sausage roast (which looks better than it sounds).

Thankfully the spice is absent from his favourite school pudding: pineapple upside-down cake. That gets flavoured with vanilla seeds, cinnamon, bay leaves, star anise and cracked black pepper. “Don’t be scared,” he tells the nervous-looking cook at his old school.
