The meat of James Martin’s home cooking series has been the kind of faff-free food that’s designed to satisfy the household rather than impress the neighbours. But he acknowledges that when sociability strikes, it’s useful to have a few smarter options up your sleeve, and to finish the series he offers ideas that wouldn’t look out of place at a restaurant, let alone a dinner party.
Beef wellington, custard soufflé and passion fruit delice all score highly on the “oooh” scale. His guests are the endlessly fascinating and knowledgeable food historian Ivan Day, who makes delicate macedoine jelly, and fourth generation artisan salmon smoker Ole Hansen.
