Summary

Sue Perkins and Mel Giedroyc present as the remaining four bakers take a deep breath and head into the semi-final of the nation's favourite baking contest. However, there's no time to marvel at how far they've come - it's Patisserie Week, and they will need to demonstrate that they have skills worthy enough to see them through to this year's final. The bakers are challenged to make a signature baklava - two types of any flavour they like, before the technical challenge demands they knock up a German Schichttorte, a cake cooked in stages under the grill to create 20 layers of different coloured sponge. Finally, the showstopper sees the semi-finalists baking non-stop to create two entremets in which they should demonstrate as many personal skills and techniques as they can

It’s week nine so the remaining four bakers should know they can never get anything past the gimlet-eyed Paul Hollywood. Yet still they try.

The semi-final is all about layers. First task is baklava. “Not what you wear when you’re doing a bank job,” explains Sue Perkins, although she’s so fascinated by the home-made filo pastry being rolled out until it’s skin-thin, she can’t resist sticking some onto her face.

However, it’s the technical challenge that sees two bakers cutting corners. It’s a Schichttorte, a tongue-twister of a name that makes Mel and Sue giggle, “A Schichttorte? You don’t know… they might make a good one!” Each of its 20 sponge layers is grilled before glazing it with chocolate. That’s 20 layers. Not 17. Not 18. Because before tasting them, Paul kneels at the gingham altar to count every single flippin’ layer.
