Salmon and watercress parcels

  • watercress 80g
  • soft butter 50g
  • skinless salmon fillets 4
  • shortcrust pastry 500g
  • egg 1, beaten
  • 1.Heat the oven to 190C/ fan 170C/gas 5.
  • 2.Whizz the watercress and butter in a food processor to a paste and season.
  • 3.Roll out the pastry on a lightly floured surface to ½ cm thickness and divide into 4 squares. Put a salmon fillet onto each square and cover with a layer of the watercress paste.
  • 4.Brush the edges of the pastry with egg, then fold over and join them together so the salmon is completely covered.
  • 5.Trim off any excess pastry so you have a neat parcel shape. Brush the top with more egg and bake for 20 minutes until golden brown and crisp.
