Chicken and kale one-pot

  • olive oil spray
  • onion 1, diced
  • garlic 1 clove, crushed
  • carrots 2, diced
  • celery 1 stick, diced
  • baby potatoes 6-8
  • skinless chicken thighs 4,
  • boneless and all fat trimmed
  • chicken stock 400ml
  • white wine 150ml
  • kale 200g, sliced
  • 1. Heat a spray of olive oil in a pan and fry the onion for 2 minutes until translucent. Add the garlic, carrots and celery, cook for another 5 minutes then add the chicken thighs and fry until lightly golden.
  • 2.Add the wine, reduce by half, then add the stock and potatoes and season.
  • 3.Bring to the boil and simmer with the lid on for 20 minutes until the potatoes are just cooked. Add the kale and cook for another 5 minutes before serving.
