  • butter 75g
  • caster sugar 100g
  • plain flour 225g
  • baking powder 1 tbsp
  • buttermilk 225ml
  • apples 100g, peeled, cored and chopped
  • ground ginger, large pinch
  • 1.Turn the oven to fan 180C/conventional 200C/gas 6. Line 8 holes of a muffin tin with cases, or strips of baking paper. Beat the butter and sugar together, then stir in the flour, baking powder, buttermilk and a pinch of salt.
  • 1.Toss the apples with the ginger and fold into the mixture. Divide between the cases and bake for 25 minutes, until golden and risen.
