Sage and onion toad-in-the-hole

  • extra-lean pork sausages 8
  • red onion 1, cut into wedges
  • olive oil 1 tsp
  • plain flour 150g
  • egg 1
  • skimmed milk 300ml
  • sage 2 tbsp, chopped
  • 1.Heat oven to 220C/fan 200C/gas 7. Put the sausages and onion wedges into an ovenproof baking dish, drizzle over oil then cook for 25 minutes until everything is turning brown.
  • 2.Meanwhile put the flour in a bowl, whisk in the egg and milk to make a smooth batter then stir in the chopped sage. Pour into the hot dish then cook for another 30 minutes until crisp and golden.
