Grilled mustard salmon with butter bean crush

- dijon mustard 2 tbsp
- brown sugar 2 tsp
- dill 1/2 a small bunch, chopped
- skinless salmon fillets 2
- butter beans 400g tin
- lemon 1
- balsamic 1 tbsp
- olive oil
- rocket 50g
1.Mix the mustard, sugar and 1 tsp of the dill, season, and rub over the salmon. Grill for 5-6 minutes until glazed and just cooked through.
2.Heat the butter beans then drain and crush with a grating of lemon zest and the rest of the dill.
3.Season. Whisk the balsamic with 1 tbsp olive oil.
4.Serve the salmon with the beans, lemon wedges, rocket and a drizzle of the dressing.
