  • dijon mustard 2 tbsp
  • brown sugar 2 tsp
  • dill 1/2 a small bunch, chopped
  • skinless salmon fillets 2
  • butter beans 400g tin
  • lemon 1
  • balsamic 1 tbsp
  • olive oil
  • rocket 50g
  • 1.Mix the mustard, sugar and 1 tsp of the dill, season, and rub over the salmon. Grill for 5-6 minutes until glazed and just cooked through.
  • 2.Heat the butter beans then drain and crush with a grating of lemon zest and the rest of the dill.
  • 3.Season. Whisk the balsamic with 1 tbsp olive oil.
  • 4.Serve the salmon with the beans, lemon wedges, rocket and a drizzle of the dressing.
