Courgette and rosemary white pizza

Rosemary makes the perfect compliment to courgette in this alternative pizza.

  • ciabatta or pizza mix 300g
  • mascarpone 4 tbsp
  • garlic 1 clove, crushed
  • courgettes 2, cut into long ribbons with a potato peeler
  • rosemary chopped to make 1 tsp
  • olive oil
  • 1.Heat the oven to 200C/fan 180C/gas 6. Make up the bread mix following the pack instructions then roll out the dough to make a large pizza. Put on a heavy baking sheet.
  • 2.Beat the mascarpone to soften then beat in the garlic and lots of seasoning. Spread over the pizza base leaving a small border. Toss the courgettes and rosemary in 2 tbsp olive oil, season then arrange over the base.
  • 3.Bake for 20-25 minutes until golden, puffed and cooked through.
