WHY IT’S LIGHTER Use chicken breast rather than thighs and skewer with lots of veg.
- skinless chicken breast fillets 2, cut into chunks
- garlic 1 clove, crushed
- lemon 1/2 juiced and zested, 1/2 cut into wedges
- dried oregano 1 tsp
- olive oil 2 tsp
- green pepper 1, cut into chunks
- red onion 1 small, cut into wedges
- flatbreads 2, griddled
- salad leaves to serve
1.Put the chicken, garlic, lemon juice and zest, oregano and olive oil into a bowl. Season well then toss together and leave for 30 minutes.
2.Thread the chicken onto skewers with pieces of pepper and onion in between.
3.Griddle or grill until golden and cooked through. Serve on a flatbread with some salad and a couple of lemon wedges for squeezing.
