Northern Italy Unpacked: Looking to the Future

As they tour around Giorgio Locatelli’s native region of Lombardy, he and Andrew Graham-Dixon agree it’s only polite to pop in to his parents for a traditional lunch of polenta — “the pasta of the north,” Giorgio says before explaining he’s not allowed to cook in his mother’s kitchen.

In Milan, they visit the city’s Gothic cathedral, where they meet a restoration engineer who has a moustache as impressive, ornate and flamboyant as the building’s flying buttresses and turrets. The city is a seductive mix of history and progressiveness — although Giorgio’s inside-out sandwich of salami, anchovy and apple taken from a Futurist cookbook may, ironically, not have much of a future.


The second leg of Andrew Graham-Dixon and Giorgio Locatelli's journey takes them to Lombardy, where their first stop is Giorgio's home town of Corgeno, where they have Sunday lunch. In Milan, they visit the Duomo, the Galleria Vittorio Emanuele II shopping mall and La Scala, where chef and father of the modern Italian cuisine Gualtiero Marchesi would intrigue his customers with a risotto made with saffron and gold. Andrew and Giorgio end their trip in Cremona, where they are treated to a very private concert.
