Sean Wilson continues his culinary tour of the north of England in Broughton-in-Furness, Cumbria, where he enlists the help of residents to try to break the world record for the largest Cumberland sausage. He then heads to the Lancashire seaside resort of Morecambe to have a go at salmon fishing the traditional way with a device that resembles a full-sized football net. In Middlesbrough, he decides to give a gourmet twist to the local delicacy of parmo - deep-fried chicken or pork in breadcrumbs topped with a bechamel sauce and cheese - and submits his entry for judging at an annual awards ceremony. The final stop is the Lake District, where Sean finds out what it was like to cook for an 18th-century country house, working from original recipes that have no specified timings or quantities.
