In a brave scene, Heston Blumenthal dons a pink apron to meet the ladies of his local WI. He wants to see how they make scrambled egg. You’re longing for one of them to show him how her family has always used liquid nitrogen, a flame thrower and a bushel of pipe tobacco, smelted underground for two days, then for Heston to exclaim that the results are perfection. But it doesn’t happen.

Instead they demonstrate everyday techniques about which Heston is polite, before wowing them with his secret scrambled egg weapon... The results look – and according to the ladies, taste – superb. It’s another example of HB’s ability to reinvent familiar things,
and eye-opening TV.


Chef Heston Blumenthal questions the way eggs are often prepared. He argues that instead of being boiled they should be allowed to stand in hot water after being brought to the boil, and showcases his skill at poaching them. He also prepares a Scotch egg that is crunchy on the outside and runny in the middle.
