The bookish chef’s follow-up to the massively successful Simple Suppers aims to make us all feel more confident in the kitchen.

Slater wonders why classic taste combinations work as well as they do. In the first episode he looks at the enduring appeal of sweet and sour, illustrated with his favourite recipes. He makes dishes including pork chops and gooseberry, and rhubarb with caramel sauce, which all work because of this curious marriage of flavours. And he leaves his kitchen to visit friends, who cook one of their favourite dishes: a lemongrass and sea bass parcel served with a pineapple dipping sauce.
