The Marina Bay Sands in Singapore resembles a spaceship perched uncertainly on three skyscrapers. Above the 2,500 rooms, 60 restaurants, casino and shopping mall is a curved sky garden with a 150m infinity pool. It’s a big hotel.
Finding out how it’s run are Monica Galetti and Giles Coren, who don various uniforms to shadow the staff. They have a simple, contrasting dynamic where Galetti thoughtfully observes and Coren mucks about: she boggles at the kitchen, he revs a Ferrari in the car park. Galetti interviews a housekeeper who sends money home to China to support the son he sees once a year; Coren fires quips at the penthouse suite’s fastidious butlers, rakishly implying they’re silly for caring.
What they both do is bring out the characters of people who take pride in being part of a stunning operation, but who spend most days in mundane anonymity among 9,500 pressured staff.
Giles Coren and Monica Galetti join the staff working in some of the most extraordinary hotels around the world, beginning with Marina Bay Sands in Singapore, which employs 9,500 people and caters for a million guests a year. Their duties include acting as attendants at the world's largest infinity pool, working as a butler under a former special forces officer, and joining a catering team that provides Brazilian, Chinese, French and Japanese cuisine for 60 restaurants.
