There’s always a “but” in the guest judge’s critiques of the food he’s just tasted. Something along the lines of “I loved this and thought that worked (short pause) BUT (longer pause) it was too salty/needed more seasoning/didn’t tell a story/was three different dishes in one”. Cue a deflated chef who’s been toiling over the witty, complicated and probably delicious concoction.
It’s the turn of the North West to prepare patriotic dishes commemorating the D-Day anniversary so, perhaps inevitably, two of the starters (created by Mary-Ellen McTague and Mark Ellis) are inspired by the Dig for Victory campaign while James Durrant produces “Spam” without a morsel of canned pork luncheon meat.
