Moussaka is just the kind of retro dish that Jamie Oliver and Jimmy Doherty like to revitalise in their pier-end café. But the classic Greek dish comes in many varieties – lamb, for instance, is not de rigueur and opinions differ on how you should cook the vital aubergines. So it will be interesting to see which approach Jamie prefers as he rustles up a moussaka with the help of Britain’s Got Talent judge Amanda Holden, this week’s celebrity pilgrim to Southend-on-Sea.

The buddies’ other dish comes from further back: maid-of-honour tarts are thought to have originated in Henry VIII’s court, but they’re ripe for a revival.
