In 2011 chef James Martin attempted to improve the quality of food served to patients in Scarborough General Hospital. After the initial shock of seeing all the tinned and packet food on offer (remember the frozen omelettes?), he managed to introduce a new menu that met patients’ nutritional needs.

Now he plans to improve hospital catering across the country, starting with Birmingham’s Royal Orthopaedic Hospital where kitchen staff face losing their jobs thanks to a growing overspend and shocking levels of waste. Martin is horrified to discover that nobody seems to know how many people they’re cooking for, but it’s the custard that sparks the first row.
