2/24. Five of the 10 chefs from yesterday's heat return to face a skills test, in which they must demonstrate their ability to butterfly sardines and make potato dauphine. The top four then have to re-create a classic Escoffier poached chicken recipe before preparing their own dish to be judged by MIchel Roux Jr and Gregg Wallace, who pick three contestants to advance to the quarter-final.
