15/24. Monica Galetti and Gregg Wallace set the remaining five chefs a 12-minute skills test of preparing and serving sea urchin. Only four of them will go on to try and re-create a classic dish featuring smoked salmon, poached egg, turned artichoke and truffle, before preparing their own dish to be judged by Michel Roux Jr and Gregg, who pick the best three contestants to go through to the week's quarter-final.
