New Zealand chef Nici Wickes travels to Oaxaca, Mexico,and samples unlikely snacks at the market before dropping into a chocolate mill and visiting an indigenous Zapotec family to learn how to make tamales from scratch. Back home she makes a delicious chicken mole followed by rich chilli chocolate volcanos.
