4/5. The chef continues his journey as he heads to the German border and the region of Alsace, in north-east France, exploring the area for its finest produce, from wine to jam. In the town of Riquewihr, he cooks a four-course meal comprising onion tart, trout with herb puree, pork chop with vegetables and rum baba cooked in syrup of kirsch.
