2/5. Reza Mahammad travels to Jodhpur, where he samples food prepared by members of an ancient desert tribe, before visiting the Umaid Bhawan Palace to taste the chefs' interpretation of the dishes. Inspired by his findings, he makes kadhi pakora, spiced vegetables with polenta and tomato and ginger chutney.
