4/5. Restaurateur Reza Mahammad travels to the Lake Palace hotel on Jag Niwas island in Lake Pichola, Udaipur, where he meets a chef who was born there 58 years ago and is retiring. Back in the kitchen, he prepares dishes inspired by his experiences, including lamb in pickling spices and a colourful kachumba.
