Having a rather regal bearing himself, London chef and restaurateur Reza Mahammad is the ideal (if eccentric) guide to the royal residences of India. The palace cuisine that grew up around these great houses has been exported worldwide, and reflects the variety of the regions as well as the elevated circumstances in which it was originally prepared.
In the first of the series (previously shown on the Food Network), Reza meets a chef who works at Jaipur’s Rambagh Palace (now a hotel), loses himself in the colours of a street market and makes a rich Rajasthani lamb curry.
